Ingredients for Thai Stir Fried Beef with Holy Basil

* 300 grams beef finely chopped (or meat of your choice)
* 2-4 cloves garlic, finely chopped
* 1-2 shallots/Asian red eschalots, sliced
* Small Thai chillies (to taste) prik kee noo or mouse shit peppers
* sugar (to taste)
* small bunch of holy basil
* 2-3 tablespoons of oil
* 2 tablespoons of soy sauce
* 1 tablespoon of black soy sauce

Tip

Instead of using small Thai Chillies you can use slices of habanero, jalapeno or fresno peppers which give a better color and in my opinion a better taste, a tablespoon of stock can also be added if you wish.
If your not in Thailand and want to store freshly bought holy basil there are several ways discussed here, or you could always grow your own Thai Basil.

Preparing Thai Stir Fried Beef with Holy Basil

Pound chilli and garlic, add oil to your pan or wok and heat high, add chilli and garlic, after a few seconds add your shallots and beef, keep the heat high and keep stirring, when the beef is nearly cooked add your soy sauce and black soy sauce, on finishing add your holy basil and give it all a quick few stirs, your pad ka pow is now ready to be served with plain boiled rice.
