Making Thai green curry paste
Traditionally the curry paste is made using a mortar and pestle, nowadays a food blender is the most common option, also many companies supply ready made green curry pastes, such as Lobo, Mae Ploy, Thai Kitchen Curry Paste, Hand brand, Mae Anong and A Taste of Thai.
Ingredients for paste
* 3-6 medium green
chillies chopped (to taste)
* 2 shallots/Asian red eschalots, roughly chopped
* thumb sized piece of fresh ginger or galangal, peeled and chopped
* 2-4 garlic cloves, crushed (to taste, Thai garlic isn't very strong)
* small bunch of fresh Chinese Parsley including stalks and roots
* 6 kaffir lime leaves, chopped
* 2
lemongrass stalks, chopped
* 1 tablespoon coriander seeds, crushed
* 1 teaspoon of ground cumin
* 1 teaspoon of black peppercorns, crushed
* 3-4 tablespoons of coconut milk
* 2 teaspoons of lime juice
* 2 teaspoons of Thai fish sauce or soy sauce if your vegetarian
* 3 tablespoons of olive oil

Method
1. Place all of the ingredients in a food processor or mortar and turn to paste, if needed more coconut milk can be added. This can be used straight away or stored in the fridge for a couple of weeks.
Thai Green Chicken Curry Ingredients
* 1-2 tbsp vegetable oil
* 2 tbsp green curry paste (to taste)
* 1 tbsp sugar (to taste)
* 1-2 thick stalks
lemongrass, chopped
* 500grams of chicken cut into bite sized pieces
* 4-6 kaffir lime leaves, chopped or whole (to taste)
* 300ml coconut milk
* Thai fish sauce (to taste)
* small handful of Chinese Parsley, chopped
* 2 tbsp lime juice (to taste)
Method
1. Heat the oil in a wok or deep frying pan. When the oil is hot add the green curry paste and sugar and cook for about a minute. Reduce the heat to simmer and add lemongrass, chicken pieces, kaffir leaves, coconut milk and fish sauce. After 25-30 minutes it should have thickened slightly. Mix in the Chinese parsley and lime juice. Do a taste test and add more of whatever maybe needed.
2. Let the curry sit for a few minutes then serve with rice.

If your curry is too spicy you can add some sugar, if it isn't spicy enough add a little more curry paste.
