Spicy Thai Pork Salad Laab Moo Recipe

Laab originated in the north eastern part of Thailand known as Isaan, for this dish any meat can be used including frog, duck, chicken and beef just to name a few, in Isaan it will generally be served with sticky rice and a side dish of vegetables, ie string beans and cabbage set over some ice cubes.

Ingredients to Make Laab Moo Spicy Thai Pork Salad

* 300 grams ground pork or whatever meat you wish
* 1 tablespoon toasted rice smashed
* 1/3 shallot, thinly sliced, or red onion
* green onion/spring onion to taste, sliced
* 1 lime
* chilli to taste sliced, or you can use ground dry chilli
* 2 tablespoons fish sauce
* 1 sprig Chinese Parsley, chopped
* mint for garnish, chopped

Preparing Laab Moo

* Squeeze juice from half the lime onto the ground pork, mix well and put to one side to marinade.
* Prepare and slice shallot, onion, chili, parsley.
* Heat pan with a couple of table spoons of water in, place meat in pan and stir till cooked.
* Take pan off the heat and mix in the shallot, onion, chili, parsley, fish sauce, the rest of the lime juice and half the toasted rice.
* Place on plate and garnish with mint and the remaining toasted rice.
