Thai spring rolls ปอะเปี๊ยทอดมังสะวิรัติ are a popular snack and relatively easy to make, these can be served with Sweet Thai Chilli Sauce or peanut sauce as in this recipe, traditionally the peanut sauce is made from base ingredients, a quick cheat is using crunchy peanut butter, another quick cheat is using a food processor instead of a mortar and pestle.

Thai Spring Roll Ingredients

* 1 pack Thai spring roll wrappers (Vietnamese ones can be used but are made from rice flour as opposed to wheat flour)
* 1 cup of shitake mushrooms finely chopped (soak for 30 minutes if dried)
* Glass noodles soaked in warm water
* 1 1/2 cup of bean sprouts
* 1 cup of chopped cabbage
* 2 cloves of garlic mashed (or to taste)
* 2 tablespoons of Thai light soy sauce (or to taste)
* 1 teaspoon of ground white pepper (or to taste)
* 1 raw egg or rice flour to make paste to stick wrappers closed

Making Thai Spring Rolls

In a wok or pan add oil and bring to medium heat, add garlic.
When garlic is nearly cooked add glass noodles and mushrooms stirring well.
Now add bean sprouts, soy sauce and pepper, taste test and place in bowl to cool down.
Prepare spring roll wrappers, either defrost or soak in warm water.
Place 2 or 3 tablespoons of the filling into each wrapper, roll up and stick the end with either your whisked raw egg or rice flour and hot water paste.
Add more oil to the wok or pan and bring to medium heat, now start adding your vegetable spring rolls.
Cook until crisp and golden brown.

Peanut Sauce Ingredients

* 1/3 cup of peanuts (dry roasted)
* 1 clove of garlic minced
* 1 tablespoon of sugar
* small amount of pepper or chili powder (to taste)
* 1 tablespoon of Thai chili sauce
* 1 tablespoon of lime juice
* 1 - 2 tablespoons of fish sauce
* 1 tablespoon of sesame oil
* coconut milk if needed to thin sauce

Making your Peanut Sauce

* If you are using raw peanuts put them in a lightly oiled hot wok and cook for a few minutes whilst stirring on high heat.
* Place all ingredients into blender and blend well
* If the sauce is too thick it can be thinned down with coconut milk
