Thai cucumber salad สลัดแตงกวาไทย is a quick and easy dish to make that goes well with chicken satay, the liquid can be stored in the fridge for when needed and makes a nice sweet and sour side dish for many spicy Thai meals.

Cucumber Salad Ingredients

* 4 small cucumbers sliced
* 1-2 shallots - red Asian onions finely sliced
* 1 large red chilli sliced
* 1 pinch of salt
* 1/3 cup of white vinegar
* 2 tablespoons of sugar
* 1 tablespoon of chopped Chinese parsley for garnish

Making your Cucumber Salad

* Heat vinegar in a pan. (Do not use an aluminum pan)
* Add sugar and salt, stir well.
* When the sauce thickens slightly take off heat and allow to cool.
* When ready to serve put chilli, shallots, cucumber in serving bowl and pour in mixture and stir.
* Garnish with Chinese parsley.
