Mate, those tilapia and catfish at the market are raised in farms, not stagnant ponds. No way does a stagnant pond give returns and it's all about economics. I can assure you that tilapia don't reach the 'market' sizes without a constant flow of fresh water, careful management and a huge introduction of growth hormones and anti-biotics, Avoid at all costs.

A fish from a pond is a lot healthier than those zombie fish you see at the market, full of drugs and chemicals, although no argument from me that any sea fish is the way to go.

    I never actually met any.

I bet you had Prawn Cocktail crisps as well!

They were at least a decade later.

I could go a tinned salmon & cucumber sarnie right now.

Somehow the Som Tam Gai Yang I just had seems very light.

Still the best breakfast memory yet. Doesn't get any fresher than that.
and just Remembered that I found about a dozen decent size pot plants growing and taxed them a little bit. Thus adding to the trout memory. Happy days indeed

Gee.. sign me up, that sounds delicious.

I see ponds around here and all they have are those whirly bird deals flipping water or the fountains to keep them from being stagnate. Then a big net haul and off to market. I'll pass.

But I guess its the life we live in now Mendo. All about quick growth to market on almost all live stock unless of course you are willing to cough up good money to eat better natural type food. There is a market for it.

Indeed. As a kid I would go down to the local fall creek and net us up some fresh steelhead that came direct out of the ocean to spawn. My Dad would grill them up and it was heaven. Nothing like it. Pretty soon the younger generation can eat AI Salmon.

They are calling it ORGANIC stumpy and they have a licence to print money I'm not all that fussy but a lot of folk are sick of the shit quality of Everything really.
Mrs bld reckons she can taste the chemicals in food grown here. That may be true? Lao people love to eat fresh. Big supermarkets and no patience are still quite a foreign concept .

I was watching a documentary the other day on how the Chinese can now convert human shit into food.

It's like a reverse process of what you Joe and Mendy do in the kitchen

Lamb shanks & mint peas. Everyone loves them, except Mrs Willy.

Umm I will take a pass on this one. That looks more like Brit cuisine. It is drowning in some sauce or gravy and you can not see the meat.

^ If I could offer a pea diagnosis, I think they look a bit freezer burnt.

But any pea is a good pea, of course.

Strangely enough, we also had peas last night. Mushy peas, and 'Harry Ramsden's' mushy peas at that. You can now get two types of mushy peas AND Atlantic cod AND Atlantic haddock in Korat. It's almost like living in a proper place.

It was haddock an' chips last night.

Of course, nothing is ever straightforward in this bloody place. When it came to microwaving the peas I remembered that the built-in microwave blew up over Christmas. That gaping hole is where it used to live... above the other gaping hole where the matching, built-in oven that blew up three years ago, used to live.

    [IMG]https://teakdoor.com/attachment.php?attachmentid=121116&d=1736135455[/IMG

So, off to the gardener's kitchen it was. Why does life have to be so complicated?

Apologies to Max, for waking him up.

Whenever I open the gardener's microwave it is with trepidation... a bit like when you're forced to use a public toilet and the seat's down. You have to lift that seat... but dread what you may find.

Sure enough, there was something in there waiting for me...

    I mean... WTAF???

Anyway, I removed his 'dish', microwaved my peas and beat a hasty retreat.

I think that the harder you have to work for a meal, the better it tastes.

And I am now a firm convert to this 'Harry Ramsden' character's mushy peas. They're mushier and wetter than Batchelor's and I will definitely be getting them again.

Korat Chef... 'Making life in Korat bearable'.

Mushy peas are unheard of where I come from.

    That fish looks excellent though.

And for the record, I have caught a rainbow troot in Auchnagatt, so it's not even too cold for them in the bitter North East of Scotland!
