Merry Xmas Mendy. I think removing the metal rack may have been a mistake, as someone said no air circulation now.

Anyway, no wife or daughter as yet so I've got the hump and am sitting alone by the pond with Johnny and Leo.

Even Anna won't leave her chair.

    Merry fukn Christmas!
If they're anything like mine ones probably on her new computer in her room and the other is either asleep or on her phone in the AC.

I'm alone, with 6 dogs, plus the girl outside with her 8 puppies. Anyone need a puppy in January?
I refuse to get grumpy about things. Even the neighbour somewhere who is pumping out a thumping bass of decidedly non-Christmas music this morning.
Off to the village for a bowl of famous Isan Xmas noodles. Trying to defer the alcohols, it's going to be a long evening and I can't leave early because this is where I live.
I wonder what time the massage shop closes?

We have a PC connected to the main TV as a media center etc.

Then another PC in an open office area that the kid uses for study and playing Roblox etc.

I'm reluctant to either move it into her room or buy a new one for her room as I would never ever ever see her again.

Yes, but what to do? It was either remove the metal grill underneath or shave the top inch off the chicken?

I must admit that the underside of he bird is looking decidedly underdone after two hours?

I've always liked that large breasted, skinny white-legged combo, but this is ridiculous!

You could flip it over half way?

Or stick the whole setup over a hob?

^^ Are you talking 'cooking' mate, or continuing the sexual innuendos?

Only two burners on the hob work, and I have veg and gravy to cook!

I'm resorting to my usual tactic... a whopping great Johnny Walker and see what happens.

That's what I'd do if I wasn't getting the result I wanted. Flip the bird over, apply oil liberally and carry on.

Sorry guys, I'm trying to concentrate here.

Now you've got me thinking about my upcoming passport renewal run.

What kind of oil? Scented or neutral?

    Coconut it is.

I love the smell of coconut in the morning.

Anyway, about to flip my bird s could go quiet for a while.

The good news is that the mango and blackberry crumble is prepared and ready to go!

Only have to sort out some custard now.

First thing’s first, get the dogs onside.

Or just put them to sleep so they don’t hassle me while cooking.

Only got myself to blame for deciding on French Ingin Soup.

Red wine added to the soup and wee jug fur myself.

    Hey Mendy - Merry Christmas!

Watch the cook on that chicken. It is really recommended these days not to stuff a chicken/turkey. Because of the stuffing the heat cannot easily penetrate the inside, so the meat near the bone can be very undercooked (food poisoning undercooked).

    just did a quick search:

Harmful bacteria can survive in stuffing that has not reached the safe minimum internal temperature of 165 °F possibly resulting in foodborne illness.

    ^ Bladdy hell, show off!

I could have donated a couple of chicken's feet to your cause if I'd known!

This is where we were at...

But the soft, milky white underside was barely touched.

    And I couldn't eat that!

So I got my helper to remove the bacon...

And then flipped the bird over to reveal the milky white underside.

I also drained off the fat.

Re-applied the bacon, the foil went back on, and Bob's yer uncle.

    And Fanny (Craddock's) yer aunt.

Things are going a bit better now that I've flipped the bird over.

What a topsy-turvy Christmas this has been so far.

I'm still not particularly cheerful today, but when the wife dressed Maya up I feigned a 'guffaw'.

Because let's face it, a grumpy Mendip won't get a Christmas shag!

Sitting in the fat, the white side has been stewing rather than roasting. Did it shrink enough to get the metal rack under?

I've been hearing that for years now. Just as long as the bird is thawed nicely and cooked to the stuffed weight, there really isn't a problem. Just cook until the juices start to flow rather than taking it out early, that's all.

I held firm on this with my boy until he was 16 or 17 I think. Before that the only computer he could use was in the living room.

As noted, the inside of the bird has to get to at least 165F - by that time your bird is likely too dry.

^ Yes, you are quite right, the breast meat is notoriously too dry. The gravy or sauce served with it is very important for a decent roast. However, I have stuffed birds for 50 years or so now and never suffered ill effects.

Jeezus Mendy that chicken or whatever it is looks like a crime scene and not food. Do you do this on purpose?
