    ^ Sorry mate, I didn't realise that Nong Ba Phua Boo (sp) was taking up so much of your spare time lately!


    I have always been a Bisto boy, and those from the UK in the 70s will know what that means!

    But recently I ran out of Bisto powder, and the guy at Korat Chef talked me in to trying this stuff.

    OK, so it's from Yorkshire, but I was desperate and they can't all be bad?



    So yeah, I Christened this 'Goldenfry' stuff with a cottage pie last night.



    The anticipation was palpable...



    But I have to say, I don't like change but this newfangled northern stuff looked OK.



    The proof of the pie is in the eating... and another masterpiece from the Mendip kitchen.

    (And that was pure genious!).



    And if you don't consider that a cottage pie Snubby, let's call it a 'Cottage Pie with Peas!'

    I'm no purist.

    And today for lunch (sorry, off topic), it was Korat Chef's chicken and ham pies for lunch!

    It's pie city in Isaan!

    With a couple of Korat Chef's 8 inchers.




    I asked the daughter what she wants for her last meal of 2024... and she wants Steak and Kidney Pie!

    I have a big one in the freezer, all oven ready for tomorrow.

    I could not be a prouder father!

    Let the cooking begin. 3 Live Maine Lobsters and King Crab. We will boil the King Crab and indirect cook the Lobster on the grill. Sides will be homemade mash taters and fresh local veggies. While the Thai family likes a sour chili dipping sauce on their seafood, Me I prefer garlic fused drawn butter with a bit of Paprika.

    I am already drooling.

    We order through a seafood distribution company. You place the order and the date you want them and they fly them in. Then they are shipped to us by air to the local Lampang Airport.

    Couple C Notes for the crab delivered. But again, guaranteed alive and fresh which is was. Frozen King Crab is awful IMHO. They soak it in brine so its mushy and way to salty. Fresh is the only way to go.

    I quite enjoy the 7 colored ( Spiney Lobster) caught down south by Phuket and into Malaysia. No big claws but the tail meat tastes outstanding.

    There's a Cray in Australia they call the painted Cray or bamboo, spiny lobster they don't have a lot of flavour but are good in a seafood bisque or tonnes of butter and garlic which is how I like most of my seafood.having said that the thais have some bloody good dipping sauces for prawns and lobster.
    Never tried a Maine lobster but guessing those bad boys are worth the import. Happy new year stumpy family.

    The lobster they catch here is the western rock lobster and mostly go out for export now that the Chinese have dropped the embargo on them the last govt caused ,can get a frozen one about 200g in the supermarket for $20 or about $30 fresh. Not a fan of the frozen ones

    Yeah, it was good mate, the cottage pie went down a treat.

    I think it may already have thickening added because it's much paler than Bisto powder, so I didn't add any flour.


    Fukk me, I went full on Fanny Craddock mode there.

    its Salmon for dinner tonight. going to veer of the usual way we eat it and try a recipe that popped up on tik tok or somewhere.

    BLDS Salmon stuffed with creme cheese wrapped in bacon and baked in the oven. forking good it was . start with a big ole chunk of Costco Australian Salmon. heres where it gets tricky. is this farmed or wild caught ? who cares. it was fucking yummo

    hers what ya need. its pretty simple and takes about 15 minutes to prepare the same to bake

    i had 2 different kinds of cream cheese in the fridge so bunged em both in a mixing bowl and at this point added some dill and some maple syrup
