This is what a sirloin looks like. Notice the oval shape, fat along one side and the juicy little tail bit at one end? Even thickness throughout so it will cook evenly.

This is yours. Fat and gristle line through the middle. A thin flank/skirt piece folding up on the top and sides, completely different shape. Thickness varies throughout, which is why the thin edges a burnt.

Two different pieces of meat. IF you paid top dollar for sirloin, you got ripped off. If it cost £1.99 in the scraps basket due date passed then at least you got what you paid for.

Striploin is one type of Sirloin. But you also get Top sirloin, New York strip, porterhouse and T-bone.

I am really not sure what cut that is. I am with DW, looks like a flank way over cooked. Thankfully it was thin, any thicker and he would need a chainsaw to cut it and once cut he would be chewing on it until his jaw got tired.

Bottom picture is rump, not sirloin. Not exactly hard to work that one out.

^Rump steak with a gristle line and a pocket of fat inside? I have no idea what it is (besides being a very poorly butcher piece of mystery meat) but it's not Rump.
