    M'Sahib is a pescatarian, and has never had any inclination to share any meat based food that I prepare (she says the only meat she sometimes gets a yearning for is duck). Anyway, quite surprised the other day when she returned from shopping with a couple of meat substitutes, namely pseudo pork belly and pork mince. She cooked herself a pad krapow today using a mix of the two, and invited me to taste. In fairness, if I hadn't already known, I'd have taken them for the real thing. The 'pork belly' in particular actually tasted genuine, even the 'fat'. These food substitutes usually come at a premium, but these were a reasonable 180 baht or so each, each being a pack with 3 sachets of 200 grams product).

    Inspired by Malmomike's Spanish omelette the other day, reminded me I hadn't had one since leaving Spain some 16 years ago. Spanish torilla, Russian salad, grilled squid or pork with aioli were my go to tapas in my local bar. Anyway, peeled and sliced the potato and started frying in olive oil.



    Continued frying until softed and starting to crisp up and turn brown.



    In the real deal, adding onion is an option, but one I prefer. Another variation, added some fresh thyme and finally chopped green chilli.



    10 minutes of frying and it's ready to be drained of oil.



    The potato/onion into a bowl where there's 6 eggs that have been beaten, everything thoroughly mixed, and into the frying pan with just a drop of the original oil.



    Once the top has almost 'set', a plate placed over it and turned over, then slid back into the frying pan.



    Ready to go, hot or cold.



    I enjoy with some crusty bread, in this case a baguette from the freezer.







    Would be a good choice for Looper as beach picnic food.

    Had dinner at a M.E place last night, and thought their chicken and potato stew would make a nice change of post-gym lunch, so got one take away.







    And was absolutely right.

    Will move again next week.

    ^ Yup, real deal. Oh, it's 'muy'. Just need to crack the homemade aioli and sriracha sauces now Chitty. I think the secret to a good Spanish tortilla is to cook the potato and (if using) onion first, drain the oil, then into a bowl with the beaten eggs and really well mixed before returning to the pan. Doesn't work well if you pour the beaten eggs over the potato in the pan, the egg needs to surround all of the filling.

    The tortilla that keeps on giving! Last of the Spanish tortilla used up for lunch today, so between us that was 6 meals. Pretty good for 6 eggs, a kilo of potatoes and an onion. Had a solitary leek in the fridge, so sauted in butter with some red onion, and when softened, some cream and grated parmesan added. Really tasty.

    A new Robinson's 'Lifestyle' shopping mall opened near us about a week or so ago, so last night M'Sahib payed a short visit to check out the Tops food court in there. Came back with a chicken fried rice for my lunch today, so I made a Brit 'chip shop' style curry sauce to go on it, with one of the naan's that I'd just made.

    Bubbling long a slow Chili, kidney beans and black beans with 1/3 turkey, 2/3 beef mince livened up with hot chili powder, habanero sauce and diced pickled jalapeno. Should be ready by lunch.

    Asked the kid where she wanted to go for lunch, expecting Yayoi, but before I finished the answer was 'BBQ on the veranda'.

    Fairy nuff.

    Kid did a standard chicken, onion and BBQ sauce skewer.

    Did a homemade burger patty with a pinch of Larb powder added.

    BBQ'd bacon and cheese added once flipped.







    Kid mixed up a diced mater, onion, musto-ketchup salsa-relisho.





    Delisherous.

    This is the recipe that I use, though I make 8 larger rolls out of the dough rather than the 12 dinner size rolls in the recipe. Versatile rolls, I use for burgers, pulled pork, egg mayonnaise, bacon etc.

    Looks great, and with a good amount of sauce in the Penang. That's the way I make it, too often if having it eating out it's too dry.

    I agree PAG, I like mine saucy and very spicy. My wife adds that Thai Chili oil to the Penang sauce and a few extra chili's from the garden. Separates nicely on the surface.
