Any big job, especially when there's football on, needs an appropriate range of snacks for sustenance. And this spread was top level.
Can we agree on this at least?
But you're only as good as the game you play, and like Mbeumo, Dorgu and Cunha yesterday, hal was on fire.
Three things:
1. My missus put me onto this, but drop a little star anise into anything you're gonna cook for a while when it's beef or lamb. I think her Malay friends told her this- and they were right.
2. Red wine. Red, red wine. It's an essential. It's a gamechanger. I always use it in a stew or meat sauce. It takes it to another level; those froggies have been getting it right.
3. I forgot to put the bacon in - I'd never usually add it anyway - but it didn't do much. With a beef bourgignon, I always fry it off and add it later - as woz the plan 'ere - but I forgot and added it once I'd got it cooking. It did nada really.
4. Let's have a 4th. Next time - despite what I have said above - I'm gonna eschew the wine and go for gochujang. I had some in the fridge yesterday and thought about it, but the red wine is obviously robust and I felt the flavours would clash. But next time, it's happening.
Gochujang cottage pie. What say you, snubs? I know you like your gochujang; I think it could work.

I was planning to have Korean minced pork (obviously made with gochujang ++) tomorrow, to which I always add some peas and diced carrot. Usually with rice, but again, have sweet potato mash in the freezer, so am tempted to make a mini cottage pie (there will only be me eating it). Results tomorrow.
Meanwhile today, Chinese style chicken with cashew gets an airing. Played with the sauce mix today, normally only use light soy sauce, mirin, oyster sauce and some sesame oil, but added dark soy sauce also.

I considered not posting this after such a hard act to follow... but despite not looking the best this was a tasty dinner.
Last night I had stuffed pepper - the filling was minced pork with chopped red onions, spring onions, olive oil and a splash of soy sauce.
It could be argued that the roast carrots were overdone.
Maya and Molly were not impressed and made it known.
So I cheered up Molly with a bed time story.

To be fair to Mendy - and I'm admittedly not always that- I bet that was ok. I don't like peas (sorry mate), so I would have slung them, but if you're roasting peppers then that's gonna taste bloody good.

It's Chinese style (rather than Thai) chicken with cashew nuts. Chunky diced onion with minced garlic fried for a few minutes, then some diced green bell peppers added. Next in is the bite sized chicken which has been marinating for 10 minutes in a couple of spoons of the sauce (sauce is a couple of spoons of light soy sauce and a spoon of dark soy sauce which is mixed with a spoon of corn starch. After mixing, a few spoons of oyster sauce is added, along with a couple of spoons of mirin and a small spoon of sesame oil. Once the chicken is cooked, the sauce is poured into the pan and when starting to heat, cold water is added a little at a time until you get the consistency of sauce that you want (I like a fairly thick sauce). Once everything is cooked (and I'm talking a total of around 20 minutes or so), raw cashew nuts that have been roasted, along with spring onions (I prefer the Japanese type) is stirred in, and it's ready to go.
