NZ tenderloin needed eating, but myself and Edith had plans for dinner and neither felt much like steak.
Committed heresy by making a NZ tenderloin kebob (always hated that word, compared to kebab). Meat marinated on a skewer with peppers and 'nions.
Set it up for a late snack.
Few hours in a light marinade of soy sauce, BBQ sauce, mustard, pepper, garlic salt. 10 mins wrapped in foil at the oven's lowest possible setting. Then sear. Pour remaining marinade and let sit for a few minutes.
Will be committed heresy again.![]()
^ But now I feel like having steak.
Got a ribeye by the same crowd in the fridge, but will keep it for lunch tomorrow after a cycle.

That looks more like a Malaysian Rendang than an Indonesian one

Being as I'm very short of spare time these days and having a wife who only really visits the kitchen by accident when she takes a wrong turn enroute to the sofa, I have taken to batch cooking at the weekends in true 'FPS' style.
My last batch cook was bolognese/cottage pie beef sauce, which I bagged up and stuck in the freezer.
This is great as I can ask the daughter if she fancies Italian (Spag Bol) or English (Cottage Pie) and I can whip up her country of choice in an instant.
A couple of nights ago I surprised her... yeah, a true Surprise. None of this FPS nonsense.
I found some of these wrap things, neglected in the back of a cupboard, so we went Mexican.
Versatile or what?
I'm not that familiar with Mexican food so am not exactly sure if these were Burritos or Fajitas?
But they did the trick, along with a Tequila Surprise for dad!
And yeah, I appreciate that for the purists out there this may not be authentic Mexican cuisine... but it's all about mixing it up for the daughter.

More enchiladas, I think. Add salsa, sour cream and guacamole to them next time.
I am not au fait with the technical differences but this one she made was similar to the one her friend made in Coolangatta, in that it was not a dry curry by any description.
I have to say that I much prefer the more standard stewish consistency of this style of Rendang. The Rednang-iness is more about the flavour for me.
We tend to have our main meal at lunchtime, and something bordering on a snack in the evening. On the subject of Mexican, I've made and enjoyed pico de gallo salsa quite a bit recently, and having freshly made baguettes, decided to go for a 'pico de gallo bruschetta' this evening.
Sliced the baguette, brushed the top with some olive oil, then into the oven for about 5 minutes to crisp up. Taken out, and each piece sprinkled with grated cheddar before going back in the oven for another minute to melt the cheese.
Made some fresh pico de gallo, chopped red onion, garlic, couple of jalapenos, fresh coriander, lime juice, tomatoes and seasoning.
Very tasty, in fact I prefer to the 'normal' bruschetta.

Mendy, the cheese goes inside the Burrito . One point deducted for using peas instead of Mexican beans. Point reinstated for ingenuity in face of adversity .

Decided to get myself match fit and added some American Potato Tots to this nearly full monty.
Left over Roasted potatoes chopped up to smaller pieces and dry airfried to crispness, a work of genius..
