    While the site has been down this past couple of days I've been using the time productively working towards my Michelin star!

    First up my 650gram 2 "thick Tomahawk..

    Try doing it the other way around.

    Heat it in the oven first (but 20 mins will be enough for that cut) then sear it for 1 minute each side. BTW - try using a cast iron pan so it will get hotter.

    ^ Isn't that strange. I tried turning my phone around and the peas looked normal but then the pie was upside down.


    Last night it was baked, organic, freshly-caught pla duuk.

    One very obvious draw-back with a convection oven became apparent when trying to bake such a big fish!



    If you don't count the cost of building the pond, the cost of fish pellets, the cost of the electricity to power the pump 8 hours a day, the medical costs of getting my infected toe nails sorted out a couple of years ago, and as my wife has reminded me several times, the cost of her Isaan bugs, this meal was completely free.

    Apart from the rice, of course.



    A meal with no peas... I shall make amends tonight.



    I was surprised at how much I enjoyed this. The catfish is very tasty.

    Not personally but the gardener made up some brown soy sauce kind of thing it marinaded in. The wife doesn't seem to be cooking this month.

    I much prefer the pla duuk dry as it can go a bit slimy when moist. I'll maybe look at some Western recipes for the next one as I enjoyed the taste.

    Yeah maybe the magic brown marinade made by the gardener made that catfish look like it had been found dead on the shore for a spell dried in the sun.
