    Both meals look excellent as usual PAG

    Nice sheps/ cottage pie there Joe; mopping up with white bread just caps the night for me

    Nice pizza Topper, doesn't look too bad for PH and price isn't too bad either

    Monroe that looks very healthy, that will add some days to your life

    I had another steak tonight, this time with mash. These taste the difference sainsbury's steaks aren't half bad at 3.50 quid each. My daughter isn't half bad at mash which warms my heart greatly.

    ^That looks nice minus the steak for me. I hope I can add years to my life eating like this.. never felt better actually.

    Dinner yesterday.. I often eat this type of meal, 50/50 plate. half veggies, half carb like quinoa/sweet potato/rice.

    Interesting salad combo plate MM. I enjoy various Salads 2 to 3 times a week for dinner. Quite enjoyable. But still love me a steak, chicken, ribs off the grill on the other days. We don't bake anything round these parts unless my wife is making Chocolate Chip Cookies.

    Treading the Isaan waters today, though never been there and neither has M'Sahib. Laab tod, with sticky rice. Gathered the makings for the Laab tod first of all, pork mince, diced shallots, minced lemongrass, minced galangal, chopped fresh pak chee, some flour, fish sauce, fresh lime juice, and some kafir lime leaves. Concern was the almost empty hot chilli powder, maybe only half a teaspoonful left.



    First off, dry roasted a couple of spoons of uncooked sticky rice and some torn lime leaves. Roasted until turned a dark golden brown then ground into as near a powder as you can get it.







    All the ingredients then mixed together in a bowl, and into the fridge until ready to turn into meatballs.



    OK, nearly ready to go, though I may have made the meatballs a little on the large side.



    Batch cooking them in oil whilst the sticky rice is steaming.



    As I thought, a little on the large side so some tended to break up (live and learn). Also needed a bit of an extra kick from more chilli powder so had the every ready sriracha sauce to hand.



    I was actually complimented on my sticky rice, not easy to get right apparently.

    Hat Yai style fried chicken for tonight. A mix of drumsticks and thighs marinated overnight in the fridge, then once brought up to room temperature, rice flour mixed into the bowl with the chicken and marinade to form a light batter just thick enough to coat the chicken before frying in a wok.



    Very juicy chicken, which is the star of the show, not the batter like KFC.



    Side of sticky rice with crispy fried shallots, and a few spoons of sweet chilli sauce. I'm nearly going native.......

    Slightly bitter. A little bit odd, quite golden when I fished them out from frying, but then darkened. Worked with the sticky rice though. Tonight, a revisit to sweet and sour pork, as we have a family member visiting at the moment so it was a request. M'Sahib not forgotten, with a sweet and sour tofu. Pineapple rice kept the citrus theme going.

    Made two of these this evening, each one with 6 good slices. Out of the 12, only 2 were wrapped in foil and put into the fridge, so they can't have been bad. The sauce straight forward tin of tomatoes turned into a passata, with tomato puree, dried oregano, and a good amount of Sriracha put in, then simmered until quite thick. Topping was some sliced Shitake mushrooms, red pepper, and shallots, with a finishing of mainly mozzarella and a sprinkling of cheddar.
