Before I married and my daughters were born I didn't cook much. Then my daughters arrived and I was on my way. I learned how to cook many a meal from my Mom's old Betty Crocker cook book. It was loaded with lots of really good meals all from scratch. My mission was to always cook fresh good healthy meals for my daughters. My wife at the time was the same. Very seldom did we eat fast food. I felt it my responsibility to have them eat right and it worked as both my daughters cook meals at home and neither like fast food.
One bad habit my oldest daughter picked up from me was she loves her Tequila. It is amazing the influence and impact we have on our children.

Bangers, mash, and gravy are particular favourites of mine. However, I would always select the fatest porkies on offer. Understand that is not always easy in LOS. Excellent selection of vegtables, Bones approved!

Tom Yung Goong is definitely a hit and miss soup. Typically at the nice beach restaurants they are spot on and it is exceptionally good with other seafood but it has to be spicy. I have a few colleagues that do not like spicy food yet they order the soup. You just can't enjoy it bland. Has to make your eyes water a bit. Then enjoy some Grilled Seabass fish, few rock Lobsters and good veggie plate and life is gooooood.
Don't get me wrong. I love me some Dungeness Crab and a good shrimp cocktail coupled with a big bowl of Cioppino.
Those rock lobsters are absolutely dirt cheap by the kg at the Muslim seafood marked near my house. Great on the BBQ at the bar and a bit more user friendly than crabs.
Your Tom yum looks exactly how I like it.
I do like Tom kha gai, but a real man will never choose it over tom yum.

It's OK. But not a favorite of mine. My wife makes it really good but it's extremely spicy and she doesn't make it as many have it.
We grow our own chili's and they are almost too spicy.
Funny story, 6 or so years ago when my Dad came over, my wife made up a dish. It had whole green chili's in it from. The garden. My dear old dad thought it was a green bean and started chewing away. He damn near cried for an hour. So it has always been a joke with my wife and him about "watch out for the green beans".
I have always enjoyed very spicy food in all the SEAsia countries I visit.
We just bbq them whole, then when cooled down just snap the head off, put the tail in the palm of your hand, underside-up, and squeeze it until all the 'ribs' snap in the middle then open it outwards to reveal the whole tail meat.
As I type this I'm thinking, 'surely he knows this though'.![]()
