For that it was just thyme and ground pepper on it while it got to room temp. Then sprinkle some salt and burn the outside in olive oil. Even the smoke when cooking is bladdy heavenly. Off the pan and onto the plate to rest, then butter.

The one thing I miss about the West is the easy availability of proper beef.
