    Not "my" method.. the boiling water not only helps to dry the skin, but also kills any bacteria present on, and in the chicken cavity...

    It is the same method used to make duck skin crispy.

    I just sensually rub mine in olive oil.

    And then randomly throw any dried spice at it that i have in the cupboard. Garlic powder, paprica, herbes de provence, dill, and a special spicy chicken one.

    Always crispy skin, without the third degree burns.

    I do like Paxo stuffing. Or and lemon and lots of garlic up it's bum.

    Basted a lot.
