    Quite yummy but little difficult to cook right.

    Yeah but it's not so much that as getting the temp right to cook the mix/stuffing enough without burning the peppers. The edges in particular burn quite quickly but even those ones in the pic were still quite crunchy when done.

    Actually posting this just now I've had a thought to try pre-cooking the stuffing first next time.

    Generally speaking, that's how it's done, the oven bit is just to meld the flavors and soften the peppers...

    How long did they take to cook? I should buy a meat thermometer, I tend to marginally (sometimes majorly) over-cook my meat.
    A rookie mistake, being inexperienced and worried about it being raw (food poisoning)..

    I will make the humble SomTam, tonight (surprise Mrs Dick).. couldn't find Papaya, even at Asian supermarkets... I will have to substitute with carrot/mango..
    tried some for lunch, came out surprisingly well..
