    Another fried food condiment I enjoy is "wing sauce". 50/50 hot sauce such as Crystal and butter with a touch of lime for contrast.

    Bingo!!!!!!!!!! myself the exact same. A bit of lime if its in the house. If not a drip or two of the pickle juice. Cracked black pepper as well. I could not believe it was so easy as I was afraid to try for years..... Wasnt it a much stronger taste when we were kids? The stuff in bottles sucks...

    One recipe I saw called for capers, which would have added a bit more punch. I've tried it and the wife didn't like it.

    Those chips do look very good. You're lucky to have a Missus that can cook Charley, the only thing mine can make for dinner is a reservation.

    Here's my dinner from the last 2 nights. Been too lazy to resize and post them before now.

    Aussie black angus steak samidge. In case anyone needs a shock to their system, while buying this meat at Foodland they also had some Aussie Wagyu rib eye at 3850 Baht per KG. I don't mind spending, especially on quality food, but that's too rich for me...

    Ribs - coleslaw - egg salad. Simple, delicious, and messy.

    Back in Paddo my local butcher had a permanent special on Rump, $20 a kilo for 2 inch thick slabs that came out to about a kilo apiece and $25 for the same cut in Aussie Wagu....

    Oddly enough I have found some Oscar Meyer hotdogs on sale at the same time I had made some chili....so chili cheese dogs seemed like the best way to celebrate these two great icons of Americana.

    The prep:

    I fried the wieners, toasted the buns, bought some decent mustard, warmed up the chili and sauted some red bell peppers with fresh onion as garnish.


    Edamer meets bun:

    The bread is Multigrain from the Continental Bakery. Best in town by far IMO. Due to having a plane ticket to the Middle East at home and leaving soon for a month+ over there, the ribs are Pork. Fuck I'll miss Pork......

    While Pattaya isn't for everyone, it's surely the best town to live in Thailand by a mile when it comes to having a ridiculous amount of choices of places selling things like quality meat. For sure there's plenty of options in Bangkok as well, but it's a 5hr round trip to get to all the better butcheries. Lamb is the big one here lately, it's always been readily available but Big C Extra have pretty much every cut you could ever want these days. And it's cheap!.
