Watch the cook on that chicken. It is really recommended these days not to stuff a chicken/turkey. Because of the stuffing the heat cannot easily penetrate the inside, so the meat near the bone can be very undercooked (food poisoning undercooked).

But the soft, milky white underside was barely touched.
And I couldn't eat that!
So I got my helper to remove the bacon...
And then flipped the bird over to reveal the milky white underside.
I also drained off the fat.
Re-applied the bacon, the foil went back on, and Bob's yer uncle.
And Fanny (Craddock's) yer aunt.
Things are going a bit better now that I've flipped the bird over.
What a topsy-turvy Christmas this has been so far.
I'm still not particularly cheerful today, but when the wife dressed Maya up I feigned a 'guffaw'.
Because let's face it, a grumpy Mendip won't get a Christmas shag!

^ Yes, you are quite right, the breast meat is notoriously too dry. The gravy or sauce served with it is very important for a decent roast. However, I have stuffed birds for 50 years or so now and never suffered ill effects.
