Louisiana crawfish boil.
I still don't know what I'm having.
fish?
I'll call it one bourbon, one shot, and one beer.
Cajun spiced pork meatballs in a rich tomato sauce today. Great to be cooking most days again. But the meatballs did need more salt and cajun spice. And some Parmesan cheese would not have gone astray.

^ Looks good, but it's Friday, which means fish and twice cooked chips![]()
^ :drooling: (for the fish and chips)
you're killing me Hw.![]()
I decided on chips rather than peas and a pint of bitter rather than bread and butter pud
Great chips, cod was very dry though
^Looks good, but baked beans with F&C?. Really??![]()
Yes, like ordering a pint of Marston's Pedigree with a dash of lime.![]()
Got asked for the recipe for Cajun Spiced Pork Meatballs, post #18006. Have not seen anyone do that so if I'm breaking protocol be gentle with your flaming and I won't do it again.
Meatball ingredients about 1.2kg of minced pork (from Tesco Lotus), diced medium white onion, two thick slices of wholemeal bread diced (couldn't find breadcrumbs in Tesco), dried parsley and oregano, freshly ground pepper, teaspoon of salt, egg and two heaped teaspoons of Cajun spice. Mix thoroughly, form into golf ball sized meatballs (mine generally end up bigger) , roll in flour and brown in a hot large flat pan liberally coated with olive oil. Remove and set aside. Into the hot oil in the pan add a coarsely diced large white onion, 4-6 cloves of garlic, diced carrot, 4-6 mushrooms, half a sliced red capsicum and half a sliced yellow capsicum and stir fry for five minutes. Then add store bought sauces, I used a large jar of Prego Italian Sausage & Garlic sauce and a small tin of Prego Traditional tomato sauce. Reduce heat to a simmer and add the meatballs. Cover for twenty minutes then turn the meatballs over. Stir everything, may need to add some water at this point. Simmer a further twenty minutes. Serve alone, or with pasta, or baked potatoes. If with pasta have some Parmesan cheese available.
^ You had me until Prego
It workedi had to keep em in that bowl though with the amount of vinegar I'd chucked on the fish and chips, hence the discarded lime too
Mushy peas here that I've tried don't taste right. Im sure they all use the wrong sort of peas.
A quick google-
Mushy peas are dried marrowfat peas which are first soaked overnight in water with sodium bicarbonate (baking soda), then rinsed in fresh water and simmered with a little sugar and salt until they form a thick green lumpy mash. Sometimes mint is used as a flavouring
^ Double cooked by a Scotsman![]()
Trust me, Prego is real...I know it doesn't sound like it might be.

And while I'm posting, finally took the electric oven in our new house for a test drive today. Been 18 months since I had access to an oven and very much enjoyed some of these roast potatoes.
