    I've never had sponge pudding with Frenchie. Looks good though. I wouldn't take that for granite, looks like marble.

    Time to wheel out the pork fillet again, this time on a bed of onion and apple. Started by browning the fillet in a little olive oil for about 10 minutes.





    then took it out to cool whilst I sauteed the chopped onion and apple with a little fresh thyme in the same pan until they had softened and started to turn brown at the edges.



    Smeared the fillet with Dijon mustard and some more chopped thyme, and put into a lined oven dish on top of the onion/apple mix.



    10 minutes in a hot oven, then left the fillet rest for about the same time.

    We had a bumper tomato crop this year and the lady decided to make a red sauce out of some of them. So I got chicken parm w/ ricotta garlic toast....
