What happened to your...err...distinctive table mats?

^^^^ Why did you put Nutella on the top?
Fucking some of the best Mexican food you will come across on the west coast of the US. Before you talk shit about those aged hands with the black nail polish that was my Aunt wearing black on her 48th wedding anniversary. My uncle died last year of cancer. Still in mourning.

Not true at all. When was the last time you were in Mexico? The variation of refried beans in Mexico is different in every kitchen. That said this place I ate at makes those beans from scratch just like the tortilla chips and the salsa. Surprised that everyone is obsessing over beans and not the fajitas on the left. That was what it was all about.
I did mention those. Even better are steak and shrimp fajitas.
Never been. But when I lived in Texas and worked at Texas Industries(TXI) with a lot of Mexicans, made friends with some and ate at their table. There were more whole beans in their refrieds. Which is the way I prefer them.
Why is it that the "Mexican" Restaurants here in the US insist on serving them so smooth...like a puree? I've yet to figure that out. Unless they're using the previous day's(or weeks) beans and pureeing them to mask their age.
Not sure just they way they do it I guess. I have been all up and down the west coast of Mexico and I have had beans from one extreme to the next. Kind of like moms goulash different from kitchen to kitchen.
Depends. My girlfriend makes them that way. I like them both ways but it depends on what I am eating. With fajitas I prefer them more puree as I like to smear them on my tortilla before I pile on the meat and veg then a dollop of guac and sour cream...
Shit hungry again.![]()
Yeah I do that too. Smoother version is handy for that.
While we're on the subject of Mexican...there's a chain here around the midwest and south called Chuys. They have a killer alternative to the traditional red salsa for dipping tortilla chips. It's called creamy jalapeno dip. It's about the only reason I go there. I always get a pint or half gallon of it to go.
This recipe comes pretty close...
Chuy's Creamy Jalapeno Ranch Dip | That Square Plate
You might want to try it at home some time. Chuy's chips are pretty damn good too. Haven't figured out how to make them.
I think I have been to one of those in Houston. It was a long time ago though but pretty sure. Pretty sure that you live in or around Indianapolis right? Are you familiar with the big German restaurant downtown? I went to the US GP there years ago and ate there two days in a row it was so good. I can't recall the name but it was a pretty epic place with a rooftop beer garden.
