    No full moon here last light , just full of cloud , pissed with rain , Friday M25 closed most the day and a train off the rails at Watford all because of a drop of rain .

    Made some jockey's whips for lunch today. Blanched first for 8 minutes at about 140c and then for a further 3/4 at 180c.



    The only thing missing was vinegar.

    Got some marinading in olive oil, crushed garlic, shallots and lemon grass sauce. Will squirt on lime juice 30 mins before baking, serve with wedges, planning to get a half time bj for the man u game.

    Did a Malaysian beef rendang last week. A good five hours work all in, but it's worth it in the end. First I made the paste:



    Then I fried it with some dry spices before adding coconut milk and tamarind:





    Next came some toasted coconut and kaffir lime leaves after about an hour, and after about 2/2 1/2 hours, you had a perfectly edible rendang:





    Rendang should be relatively dry though, and the beef falling apart, so I kept reducing it:



    ...and reducing it:



    Until, after about 3 and 1/2 hours I served it with the world's most boring food staple:



    The rest will keep in the fridge and, more importantly, keep getting better.

    Indian lamb karahi on the go at the moment. I fcuked the spice measurements up the other week, but I'm pretty sure I've got em right this time after my taste test.



    Will stick the results up tomorrow.

    Nice one fellas. The curry, along with the humble burger, funnily enough, is one of those things that has always eluded me when I've tried to make my own. Not this time- it was bang on.

    To cut a long story short, it's taken a couple of attempts at one recipe, but it works.

    Cook the dry spices



    with the meat and your wet spices for about 90 mins in a dutch oven and you'll end up with this:



    Sieve the stock from the meat and keep it separate.



    Brown the meat, onions, ginger, garlic etc in a pan.



    Then add yoghurt and keep adding the stock.



    Eventually you'll end up with this, which is the equal of anything you'd get at home from the local Kashmiri Kitchen::



    Finally, get off Teakdoor, direct people to this website , and enjoy a beer and the football.

    Some really good looking food lately, that rendang is off the charts good. Top marks gents, greens sent if possible. BTW when I green with no comment, it's because I'm using a Tablet and for whatever reason, comments can't be added.

    Cheers fella. I lived in Malaysia for a long time and I got the recipe from my next door neighbour's 80 year old mum!

    No two rendangs are ever the same though and it's up to you how dry you take it.

    First one is a Malay/Indo rendang, and the 2nd one is an Indian lamb karahi.

    Oh right i see now. Theyre both pretty damn good actually, although i'd take the rendang if offered to send via EMS

    Ive give up cooking Dick. Just got back from Patraya where drinking was the main theme.

    This was nice though from Punch abd Judy

    Onya for eating that lot... I couldn't get through all that (unless I was super stoned).

    I prefer Burger King, to Mac d's... some of their premium burgers are not too bad...

    subway is relatively healthy for lunch, or their bacon and egg rolls for brekkie are ok.
