No full moon here last light , just full of cloud , pissed with rain , Friday M25 closed most the day and a train off the rails at Watford all because of a drop of rain .
Made some jockey's whips for lunch today. Blanched first for 8 minutes at about 140c and then for a further 3/4 at 180c.

Got some marinading in olive oil, crushed garlic, shallots and lemon grass sauce. Will squirt on lime juice 30 mins before baking, serve with wedges, planning to get a half time bj for the man u game. :)
Did a Malaysian beef rendang last week. A good five hours work all in, but it's worth it in the end. First I made the paste:

Then I fried it with some dry spices before adding coconut milk and tamarind:

Next came some toasted coconut and kaffir lime leaves after about an hour, and after about 2/2 1/2 hours, you had a perfectly edible rendang:

Rendang should be relatively dry though, and the beef falling apart, so I kept reducing it:

Nice one fellas. The curry, along with the humble burger, funnily enough, is one of those things that has always eluded me when I've tried to make my own. Not this time- it was bang on.
To cut a long story short, it's taken a couple of attempts at one recipe, but it works.
Cook the dry spices

with the meat and your wet spices for about 90 mins in a dutch oven and you'll end up with this:

Sieve the stock from the meat and keep it separate.

Brown the meat, onions, ginger, garlic etc in a pan.

Then add yoghurt and keep adding the stock.
