A slow cooked Masaman curry is great; nothing wrong with Thai beef if you cook it right. Last night I had pizza, it was good.

There's everything wrong with Thai beef and slow cooking does nothing for it. Soaking in pineapple juice either turns it to mush or mushy on the outside and still dry and tough on the inside. Papaya skin, the same.

The problem stems from lack of proper hanging after slaughter.

    Lebanese Batata Harra:

Superb. The squirt of lime juice at the end of the frying really makes it.

    Ribs were alright too.

Will hold off on the kebabs to see if Main Mrs. Luigi scrunches up in the foetal position in an hour or so.... Looked a bit raw to me. If all's still okay at 11:30 I'll stick 'em on with the football.

What happened to the chicken you posted up last week that you were cooking with expired prepackaged white sauce?

Thai beef isn't really a bad product.

Somewhere down the line, you [and most others] have conditioned yourself to believe so....without reasoned thought.
your a fuckin bell end geff but in this instance I have to agree , there is certainly some good Thai beef, but mostly it's a result of some farang involvement, Thai French beef springs to mind. Awesome product. Thais simply do not understand the butchering process, just hack it pieces and put it in the market is the style

Great minds etc. Just opened the first.

What marinade did you put on the ribs last night? They look mint.

Crushed garlic, rosemary, bbq sauce and into an airtight bag, then sous-vide for 6 hours.

Marinade - soy sauce, bbq sauce, rosemary, half a gallon of honey, s+p, before burning on the bbq.

The Batata Harra steal the show though.

    Superb.

Just 2 cups of flour, a teaspoon of salt, about 1/2 stick of butter, a scoop of Crisco and ice cold water. I just kind of do it by feel. Use a pastry cutter and then work it by hand until it comes together. Usually I use only butter but I thought I'd try Crisco this time. Turned out better.

I gotta recommend the Novotel Ploen Chit for their Sunday brunch. Kids under 6 eat free, theres a little playroom in there for kids too and pay with a Kasikorn bank card and you get 50% off the bill.

The following bill is for free flow beer and wine, 2 adults and an under 6...

Because the if you got the 50% discount, the tab for someone like me, who is Kasikorn impaired would be closer to 4K.
