A slow cooked Masaman curry is great; nothing wrong with Thai beef if you cook it right. Last night I had pizza, it was good.
There's everything wrong with Thai beef and slow cooking does nothing for it. Soaking in pineapple juice either turns it to mush or mushy on the outside and still dry and tough on the inside. Papaya skin, the same.
The problem stems from lack of proper hanging after slaughter.

your a fuckin bell end geff but in this instance I have to agree , there is certainly some good Thai beef, but mostly it's a result of some farang involvement, Thai French beef springs to mind. Awesome product. Thais simply do not understand the butchering process, just hack it pieces and put it in the market is the style

First attempt at chicken and mushroom pie with thyme and sage. Not beautiful but it tasted great.
Just 2 cups of flour, a teaspoon of salt, about 1/2 stick of butter, a scoop of Crisco and ice cold water. I just kind of do it by feel. Use a pastry cutter and then work it by hand until it comes together. Usually I use only butter but I thought I'd try Crisco this time. Turned out better.Originally Posted by thaimeme
