Whilst working in Sakhalin, I made Coulibiac a couple of times. Essentially it's like a salmon wellington, but instead of pate around the beef, the salmon is encased in a mix of chopped boiled eggs, mushrooms, with a lemon and dill butter sauce. For me, shortcrust pastry is best. It's pretty good. Not my photo.

Marinated a Pork Tenderloin in Balsamic Vinegar, Fresh rosemary and tarragon leaves.

Served with a baked tater with butter, bit of sour cream and bacon bits and Italian spiced sauteed mushrooms.
( No I did not eat the entire Tenderloin. I saved half to make a sammy tomorrow)
