    I think this is kind of on topic... Mike, you mentioned pickled eggs the other day on this forum but I'll be buggered if I can find that post.

    I have a glut of small wild hen eggs...



    And yesterday I picked up apple cider vinegar and a couple of jars at Makro.



    My plan is to hard boil around 30 eggs, but what next? Do you have any good recipes for the pickling?

    Twas me i had left over eggs so bought some malt vinegar.

    1. always malt vinegar for egg imo, never white vinegar and i've never heard of anyone using cider vinegar for pickling?

    2. You needs malt vinegar and pickling spice for pickled onions.

    Every year my mum would make pickled onions for the whole family. That was a whole day of me and her peeling small pickling onions and putting them into a very large bucket of water prioir to transferrig them to large jars with said vinegar and pickling spice. Had to have all the doors and windows open and my fingers hurt under the nails for days after and stank of onion but the end product a few months later was worth it. A summertime job.

    I stuck pretty rigidly to that recipe, although we had no dill and I didn't want to open a new bag of bay leaves just to use a couple of leaves for this.



    Fifty organic pickled eggs cooling down before being stuck in the back of the fridge.

    They should go nicely with a Ya Dong followed by a meal with peas and sprouts.

    Sorry Maya... parp!



    And then a late brainwave, to spice things up a bit!

    Did you peel them? You should add a load of whole peppercorns and coriander seed whole if you have them and yes bay.

    What is the point in buying bay leaves if you don't want to use them? What do you actually cook that uses an abundance of them?

    ^^ The wife buys this kind of thing and I'm not over confident when to use it, but good point. At least I wasn't left wondering what to do with an opened pack of bay leaves.
