    Lomo Al Trapo is a Colombian dish that involves wrapping a wine soaked cloth around a salt encrusted tenderloin cooked directly on hot coals. The butcher didn’t have a tenderloin yesterday so I decided to modify with a sirloin.

    start by slicing the sirloin into a thin(ish) strip. Flatten slightly with a kitchen hammer, and then layer with diced mushrooms. (I didn’t cooked enough).

    Next soak a kitchen cloth in red wine. I used cask wine, similar to Mendy’s Mont Saint Clair. Then later a bed of sea salt and covered in a steak seasoning of choice. Then roll tightly and tie up with string.

    This wrapped parcel then gets thrown onto the hot coals for 30 mins each side and rested 10.

    I've never been to argentina the furtherest I got was Honduras before having to backtrack to the states due to a lack of fun vouchers but I've heard Argentina and also Brazil they are all about the BBQ ing and smoking. In central America not much so. Infact I slept with 1 eye open.

    the wine stain was the least of the clothes problems. It was burned, and caked with salt. Threw it away afterwards.

    Necessity is the mother of invention and all that. Yesterday half way through cooking a roast beef dinner I realized that the damn oven wasn’t working. A quick check of the knobs and buttons, even checked the fuses in the house revealed nothing other than my limited knowledge of things electrical.

    So swap the potatoes and carrots to the stove to boil them. What about that joint of sirloin?

    Crank the grill heat up and let’s see if I can roast this.

    I used a thermometer to aim for an internal temperature of 145 or medium rare.

    Knocked up a quick gravy on the stove. I was pretty a happy with the results. In hindsight, I could have roasted the spuds as well. But then again the kid likes mash.

    Caesar salad and a bowl of 'carbonara noodles' for Edweena (noodles cooked with a beaten egg) were en route at this stage.


    All in all a nice Wednesday evening on the veranda.

    Smoke em for a few hours and prolly serve with salad/potato salad and maybe corn on the cob.

    Post them up when cooked. We did up a nice big rack last night. I wont post up the photo now but we can compare later. I used bigger St. Louis style ribs. Didnt use sauce either but a rub.
