Had the last Aussie ribeye soaked in butter then set on fire on the barbie after cycling.
Enjoyed it so much, went down to Bruce to get a couple more cut n sealed.
No need for a meat thermo with an Aussie ribeye as burnt on the outside and raw in the middle is absolutely perfect.![]()
Went to a Georgian/Armenian place for our Christmas meal.
Obviously, you've gottta have khachapuri (and some kubdari at the back stuffed with beef and pork)...
...but you've definitely gotta have the grilled meats.
Lamb, veal, pork neck and chicken topped with a dressing of sliced red onions, herbs and pomegranate juice and served with a tomato sauce on the side.
Might be the best grilled meat I've had since the last time I said grilled meat was the best grilled meat I'd ever had.![]()

^^ Albania do good grills too, whole lambs spit roasted and then the stuff they took out they make one enormous kebab with. I love it, heart, liver, kidneys, intestines etc
^ There are exceptions and i'm pretty sure most grills / roasts i've had that the meat wasn't sourced from the "you have 1 hour before its rancid" shop

The baked potato’s were done inside next to the coals.
Bone in rib eyes with chimichurri sauce & baked spuds.

We aren't allowed bbq's on our balcony, fire hazard.
I love grilled food like salmon especially. I haven't had it in a long time. Parents used to have a huge bbq in their carport and we used to grill bacon in a tinfoil plate for breaky.
That's not the 25th floor of Nelson Mandela towers MM.

Lomo Al Trapo is a Colombian dish that involves wrapping a wine soaked cloth around a salt encrusted tenderloin cooked directly on hot coals. The butcher didn’t have a tenderloin yesterday so I decided to modify with a sirloin.
start by slicing the sirloin into a thin(ish) strip. Flatten slightly with a kitchen hammer, and then layer with diced mushrooms. (I didn’t cooked enough).
Next soak a kitchen cloth in red wine. I used cask wine, similar to Mendy’s Mont Saint Clair. Then later a bed of sea salt and covered in a steak seasoning of choice. Then roll tightly and tie up with string.
This wrapped parcel then gets thrown onto the hot coals for 30 mins each side and rested 10.
And with the magic of time…
Served with tators (you may have noticed them in the Q earlier, and a chimichurri sauce I made while the food was cooking.
That looks great.
