    This is my version of an Ugly Drum Smoker (UDS). There are a few different ways of making them, I based mine off a company in the States called Hunsaker. The UDS is usually used with the original drum lid, but the lid on mine got warped when the paint was burned off. I am using the lid from my Weber 22" kettle for the moment. If I decide that I prefer to use the UDS over the Weber for some of the cooks that I do, I'll make a new lid.

    The air inlet is controlled by an adjustable vent in the bottom of the drum.

    The charcoal is contained in a basket that sits on the bottom of the drum.

    A deflector plate is placed on top of the charcoal basket to prevent direct heat onto the meat being cooked, and to also impart a vortex on the airflow to get more evenly distributed heat within the drum.

    I have the option of hanging meat from this accessory.

    I brought the temperature gauge from Amazon, it is large enough that I can see it on the CCTV in my office. However, I typically use a digital thermometer connected to the internet to monitor the internal drum and meat temps.

    I have a 22" and 26" Weber kettles, a 3 burner Weber gas grill and a small vertical reverse flow cabinet smoker. Overall, I am pretty happy with the UDS, and it probably will become my main low and slow cooker.

    Fok this shit, I'm thinking of doing a pineapple juice BBQ sauce pulled pork speciale now.

    Sear n seal a big ol' butt, into an oven pot of the bbq sauce and pineapple juice then bbq top down for 2 hours a pound.

    Had a double exercise day with a gym sesh in the afternoon so decided to test out some wings in Ol' Blackie while we did the home gym.

    Edith marinaded. BBQ sauce, soy sauce, honey, and salt I believe, whilst I built.

    I should probably clean out all the ash properly, rather than the half-arsed job I've been doing after every half a dozen burns or so. But ash has never hurt nobodae.





    We were doing 6 set of traps, biceps, abs, lats, so came out after ever set to turn and rearrange.


    Defo not the ideal way to BBQ.


    A few minor adjustments to make re: timing/turning/placement. Will be adjusted for next time. Will defo be doing them again soon.





    Very very tasty as a smokey post gym hit of protein.
