Leeks are wonderfully versatile! Here are some great side dish ideas:
    Simple preparations
∙ Braised leeks in butter and white wine
    ∙ Roasted leeks with parmesan
∙ Sautéed leeks with garlic and thyme
    Soups & creamy dishes
∙ Classic leek and potato soup (vichyssoise)
    ∙ Creamed leeks
∙ Leek gratin (leeks baked in a béchamel sauce with gruyère)
    Salads & lighter dishes
    ∙ Warm leek vinaigrette salad
    ∙ Leek and potato hash
∙ Leeks with mustard dressing (served at room temperature)
    Pastry & baked
    ∙ Leek and cheese tart/quiche
    ∙ Leek fritters
Given your love of cooking, braised leeks or a leek gratin would be particularly satisfying — they’re simple but feel quite elegant. Do you have any particular cuisine style or main dish you’re pairing them with? I can narrow it down further.

Everyone can use AI. Most better than you judging by your posts.

    Edit

    edit

went slightly off piste and added some miso paste to the cheese sauce, tasted nice.

^2 weeks early but who is keeping tabs

Patricius toast by the coast complete, it was time for a fizzy aperitif at Catholic Kiwi Lady's gaff.

The candles and incense were burning with 2 weeks left of lent

We dined on pasta with pesto and assorted Mediterranean vegetables, topped with cheese, 2 weeks out from Holy Week.

I think I might go for an indulgent carb fest for a last supper if I was getting nailed up the next day.
