    My days of proper lard chips are behind me sadly.

    I probably eat more fish than meat these days, but I think that oven chips are an acceptable compromise on health grounds.

    So last night it was pan-seared fresh tuna steak with thick-cut chips, vegetables of the day and ratatouille.



    And a top tip... when batch cooking ratatouille, freeze in flat slabs so that you can just break pieces off as and when required.



    I am big into ratatouille, I reckon that it makes a welcome accompaniment to just about any meal.



    As happens probably at least three times a week, my mother called right at the critical time and the tuna became slightly over-seared. After three decades of me living overseas my mother still hasn't really understood different time zones.

    Your rat looks a bit pale I'd you don't mind me saying. Do you use local grown? I use tinned, this is one instance where fresh isn't better unless you are in France or Italy

    We tend to use synthetic grease for log distance swimming these days mate, you've gotta be mental to use lard with all the Great Whites out there.

    Anyway, it's been long established that I make the best steak and kidney pie in Korat, and that my fish pie is maybe not as good as Looper's but is perfectly edible and will keep you going, but I have never popped my chicken, bacon and leek pie cherry.

    Until tonight, with my much sought after Khao Yai leek.

    Everything went great, the pastry rolled out a treat, and then I got distracted and burnt the bastard.

    Nothing is more annoying.



    But you soldier on...



    Because you have to.



    It was OK to be honest, but it didn't reach my usual high standards.

    It was just a bit dry...



    But I have to say, I've had worse.



    Next time I hope for more moisture and less crust... and then I've nailed it!

    But anyway, we have leftovers for tomorrow!

    And plenty of...

    Personally, I like to take care of me kid in the morning, cooking and eating our breakfast together everyday, doing the school run together, then be there to collect the kid from school for the afternoon school run, then spend the evening and night raising them. Be there with them all through their school holiday times, taking them to interesting educational places etc. I guess it could be called being there for/with them when they're not at school.

    Then spending the time that they are at school exercising, chilling, Lulu'ing and enjoying a life of freedom.

    I'm not sure why a great father that chooses to be there for their kid(s) and raises them upsets those that miss out on those times, some even abandoning kids to move to Whoreland ( ) but horses for courses, I suppose. :-)


    Cheers. Not sure what dinner will be tonight, probably Chinese for the Chinese New Year, may the coming year be graft free too, fully of happy times raising the kid(s) and being there for them in fun, educational, and healthy ways, with lots of chilling and exercising and lulu'ing thrown in during their school times. :-)
