    Had a decent curry today at an Indian Cafe with a youtuber called Billy Moore, he's had an interesting life in Thailand which was made into a book and film.
    Down to earth Scouser and a surprisingly impromptu meet up.

    Yesterday I made up a delicious beef and vegetable winter soup for dinner.



    The daughter did in fact ask me if I thought winter soup was 'appropriate' when it was 30 degrees outside. She seems to be struggling with the heat of Korat after becoming acclimatised to the relative cool of Pak Chong... with unlimited school air con.

    I told her that no-one likes a moaner.



    But I was secretly impressed with her vocabulary. Since her first half term away I have also caught her listening to the Rolling Stones, Fleetwood Mac and Blondie on my Spotify. Despite now wearing elephant pants, I think that she does have some hope.

    Is he the boxer that was imprisoned in Thailand and gained early release through muay thai ? Would of been an even more interesting lunch if you had of bumped into Charlie Veitch as well.

    Yeah that's him, he does a lot of work with the homeless now.

    Charlie Vietch can't come into the city without an army of bodyguards now, such is the migrant and homelessness problem. Every street corner yesterday had druggies and gangs of boat people.
    Sad times.

    Anyway, there's nothing draconian about my 40 degree rule.

    Although to be fair there wasn't much Thai about it, apart from the location.


    Which brings me nicely to tonight's offering... a Thai salmon quiche!

    Whenever I make up pies these days I do bulk pastry production and blind bake shortcrust pastry into pie tins to freeze, for emergencies.

    During tonight's emergency I prepared a salmon quiche in less than half an hour, stuck it in the convection oven and then enjoyed a Singha with the dogs while it baked.



    It was a bit sloppy but better than too dry, I always say.



    It's great to eat with company again!



    I would say that overall I prefer a bacon quiche but you have to mix things up on occasion.
