Mud crabs are truly outstanding eating, but I've never once bought one in Thailand for exactly the same reasons you outline above.

However, in other countries with laws controlling harvest numbers and seasons which they can be taken, minimum sizes, and where female species are protected ensuring a continuous breeding cycle:


This one was about 1.5kg, not much work to get the meat out and fantastic to eat. The Missus (Thai) can't figure out why big crabs like this aren't available in Thailand

Last night after I back from hospital...Me and friends went to some restaurant...eat leng tom yum..aroi mak..but very spicy...I forget to take pic so this pic I find from internet maybe help if someone dont know it...And somtum thai sai kho moo yang ..first time I saw it and tried it...aroi mak...
