ok... so we are an hour in and it's time to finish the makings off prior to the final cook


Carrots and potatoes in plus the secret ingredient.




Yes..... it's anchovie fillets. They will simply melt away and add umami to the base flavours.



a bunch of fresh thyme and some bay leaves






and that's it done.... back on the hob for another 2 1/4 hrs

So, off out for a few beers and to pick up a nice loaf of bread ready for the eating!

Yes... not that I particularly care but I have checked the posted IMG URLs and they are clear of any reference to my name. Must be a glitch as it hasn't happened before and I have used exactly the same posting procedure. Never mind.... it will make it easier to stalk me eh?

Foodland on *Klang is where to get them mate. They always have a few in the butchery window, I just get them to cut off a piece about the size of the one in the pic. Cheap too, under 200 baht for that piece which was enough for dinner for two with plenty of leftovers. *Don't go looking for meat like this in the new Foodland in the basement car park of Loyen Garden. I really don't know what they were thinking putting a supermarket there, more so as there's nowhere near the options of their Klang location which is only a 10 min drive away . They own a good size block of land on Thepprasit that could host a full-size Foodland and there's lots of Foreigners living in that immediate area. Nobody lives near RG, it's just tourists staying in hotels in that area who don't need to buy groceries. Weird...

I get the big bone in pork chops from Foodland Klang and their duck breasts are very good also. I understand what you say about the Royal Garden one though. I am told that the Took Lae Dee there is massive so maybe that's the idea... good location for a 24 hr food operation. The Coconut Beach ladies will be happy for a fresh attraction for punters.

Yes indeed, their bone-in pork chops are the best in town!.

The Took Lae Dee at the new location is large, probably 100+ seats!. They'll need it to fire to cover costs, I really can't see the supermarket doing well.

Headworx keeps it simple and always does a cracking job with whatever type of meat he's working with.

Traditional English Sunday dinner!!!! Chicken and vegetable noodle soup, bloody tasty that was.

This thread certainly gets the appetite going.
