    Made caramelized pork belly tonight...

    Wrap belly tightly in layers of tin foil, on a bed of spring onion, fennel seeds, salt pepper, bake on a rack for 5 hours on low heat..



    Cut into chunky man-cubes..



    Lightly pan fry to crispy up the skin...



    Add sauce (caramelized onions, star anise, red wine vinegar, palm sugar, water, honey)

    Honestly, I don't know how you can eat that. I hate it. Three layers of crap (สามชั้น / saam chan, as they call it in Thailand.). A layer of skin, a layer of very fatty pork, and a layer of pure fat. Yuck.

    It's a dish the wife and my ladyboy-in-law, only they do it on the grill. I can't abide it too well also, too much fat.

    ^Each to their own and all that but pork belly is an occasional favourite at HWHQ. The fat has to be really well rendered though, as Dickie has managed to do nicely.

    Due to the status the dish is given, I've made an honest effort to appreciate it, but I'm not there yet.

    Yes, I admit it's a very rich dish... one needs only a few pieces of pork, the rice balances the dish out well (with some spicy Rum)...

    Lil Ol' Bambi was fokin' delicious.








    I can't recall ever having such a tender piece of red meat. Taste was good. The rosemary and crushed garlic matched it well.
