
Overcast and humid this morning, so the kitchen it is. Can't remember ever eating Shakshuka, let alone making it, but sounds appealing. First off, a batch of pita bread to be made.
After the mixing of the yeast, sugar, water and flour with a few minutes kneading, ready to start. The dough is now in an oiled bowl with is then covered in cling film.
Set aside for an hour to double in size.
This then punched down to deflate, then cut into roughly equal pieces. They then rest under a tea cloth for 10 minutes.
Rolling out to rough circles whilst the skillet heats up.
One at a time, a couple of minutes each side. Puffing up nicely.
The stack made, most will be frozen.
Time to crack on with the Shakshuka. I'm using tinned tomatoes, diced red pepper, diced red onions, garlic, and a spice mix of paprika, ground cumin, and chilli powder.
Frying the onion and red pepper until it's softened.
Then the garlic and spices added.
The tomatoes go in, and simmered until they start to break down.
Ready for the eggs. Make small wells for the eggs to sit in and be poached.
Put the lid on the skillet, and check after 5 minutes or so, depending on how you like your poached eggs.
Salt and pepper added, then a sprinkling of fresh chopped coriander and parsley.
Very tasty, and got M'Sahib's approval.

I defrosted/cooked some crumpets in the air frier and to be honest it wouldn't have mattered how I done them, they are shit crumpets.
We used to make our own, so we'll do that again soon. Cheaper than chips.
^There's crumpet wars going on in Pattaya, must be half a dozen different locally made attempts at making them in the Expat shops now and none of them are any good really. Well not compared to the Warburtons crumpets that are also available, albeit at twice the price.
^Yeah too hard for me Pag, I eat 2 crumpets with butter/honey about once every 4 months so it's easier to just have some in the freezer made by someone who does it for a living![]()
Although Warburtons are not regularly available.
I like them as a treat anyway.
We were making them in our cafe a few years back, just as a trial. We gave the first batch away for the feedback and they went down well. I remember my Mrs saying they cost about 2b a piece to make so she's sell them at 10b each. Suddenly all the teachers just wanted cheap crumpets for breakfast, so she abruptly halted production.
On a similar note, you can't give them the teabag with their cup of tea or they just ask for a mug of hot water next time, while they sit there and download 8 seasons of Game of Thrones to take home.

It does look good. I like bacon cooked either the British way as shown or crispy as Topper indicated he likes. Because bacon.
