Clean up on aisle 10!
M'Sahib off to the shops this morning, asked her to get me a fresh pineapple. Had a hankering for a sweet and sour pork, and had everything in the house for it except fresh pineapple.
Anyway, made up the sweet and sour sauce first of all. Very basic, honey, rice vinegar, tomato paste and soya sauce mixed together in a bowl and put to one side.
Had a reasonable sized piece of lean pork in the freezer, so that was put to good use. Once defrosted, cut into bite sized pieces, rolled in flour, then into beaten egg before going back into flour.
In batches, deep fried in standard vegetable oil for about 8 minutes.
Then rested in a paper towel covered tray whilst the rest of the dish made.
All the oil removed from the pan, then wiped clean before adding a drop more oil. First up was chopped onion and grated garlic, fired for about half a minute.
In goes some chopped red and green bell peppers (again that had been in the freezer for a couple of months), fried for about a minute.
Followed by the diced fresh pineapple, cooked for a further minute before adding the pork balls and the sweet and sour sauce.
A small slurry of corn starch and water added to thicken, brought to a simmer for another minute.
I'd also made a fried basmati pineapple rice which also had egg, diced tomato and onion, and chopped spring onion in it. Really was good, and at least another two decent meals out of both the rice and sweet and sour.

Will be adding some to the deep freeze for emergency stirfrys soon.
They were cleaned and chopped before freezing, not whole. First time that I'd frozen them also, must be coming up to around 3 months or so ago now. They were fine defrosted, though given them time to fully defrost, preferably in a mesh colander above a bowl. Tasted just like fresh.

Nice, but gotta have it on top of the rice then a lava egg on top, then pierce the lava egg so the yolk soaks down through the topping and they both soak into the rice. Then pinch the spoon for Mendy.
