Taking inspiration from Looper's recent cottage/thatched pie, went for one today.
First off, browning the beef mince.
Mince put aside in a bowl to be added later. Small amount of butter in the pan, and 'sweated' the vegetables for a few minutes. This one has carrot, onion, and leek.
Returned the mince to the pan, added a couple of heaped tablespoons of flour and mixed in.
Added peas, beef stock, red wine, and some tomato puree.
Simmered for about 30 minutes to reduce down, then into the oven dish.
Let cool down for about an hour before adding the mashed potato. Cooling the meat/veg helps stop the potato sinking when added. Not gone for a full 'thatch' of cheese this time, just some liberally sprinkled parmesan.
In the oven for 30 minutes and she's ready.

Snubbys red hot in melted butter came out on top this time, mainly because the cornflour, cayenne and lemon peppered skin stuck to the foil
Oh well can't have it all.

Bake the wings first, then toss them in the sauce with melted butter. Use this recipe next time;

^ Yeah I used that method off that same page. I think they need frying rather than oven baking next time
