    Sundays lunch during a rainstorm. Had some left over carnitas pork I had made almost a week before, some salsa, some lettuce, and some Ranch dressing. Came up with this, not gourmet Chimichanga's, and it went down a treat.

    I'd probably need (or want) two of those though.

    The first Mexican food I ever ate in the US was a chimichanga. I only ordered it because I liked the name though!

    That looks similar to mine, but where is the Pok Chee you know as Cilantro? Salsa is the only food I like Cilantro in. Very common spice here in Thailand.

    I find it a bit too strong over here so only use a little, but it is great with chilis and onions in an omelette.

    That day I had to make it as my tomatoes were super ripe. It was the end of September, so the last of my Tomato crop.

    I am not sure if I am going to do the garden this year.

    Do a garden! When I have land we always have one. But your climate. Tomatoes, zucchini, lots of beans, all sorts of berries, then the sweet corn and bell peppers, and any kind of nice chili you want. We have a great garden here but with entirely different fruit and veg for the most part.

    ^ No not the ones in the UK, the Tarka is a spice mix inc chili which is heated in oil and added boiling to the garlicy dhal in the serving bowl in India but in the UK its not the same. I still have it with curries in the UK, nice and creamy and garlicy. You must have had it.

    A highly successful day so far. Left home at 10:45 and was home by 11:40 having gone to Royal Garden for a Pfizer booster, had a light bite at Taco Bell, visited my favourite Pharmacy and purveyor of pharmaceuticals that would normally require a prescriprion, and driven home. Life's pretty good sometimes
