    Well I never!

The next day somebody came in and ate a burger and was like, 'That's the best burger I've ever had in my life!'" Fast forward to 2022 and believe it or not, Dyer's Burgers not only still exists, but the burgers are still cooked in the original grease that made the restaurant famous more than 100 years ago

But if the idea of eating century-old grease doesn't sit well with you, Robertson assured us that it's perfectly safe. "We strain it through to get any particles out of it and then we season it," he explained. "It's the same molecules from 1912, it's never been changed." Something else that hasn't changed is the way the burgers are served. "We only do mustard, pickle, onion and pepper. We don't even carry lettuce, tomato, or any of that, that's the way they come," stated Robertson. And don't ask him what the special seasoning is made of.

That whole linked article is worth a read.

There might be a reason for that.

As a matter of interest, how do you make your batter? I start with a mixing bowl chilled in the fridge, throw in one cup of plain flour, half a teaspoon each of baking powder and salt. Then one small bottle of Beer Laos. It makes a light, crispy batter although it doesn't always stick as well as I'd like.

^ I said, 'me darling, please can you mix up some batter for later?'

    As simple as that.

However, when I do make it myself, I first search for a clean bowl, either in the cupboard or on the draining board, empty a pack of Tempura flour in and mix it up.

I believe that the wife uses the dame recipe!

Fuck that ,I've got more chance of finding a unicorn in Perth than finding a beerlao to use for pea fritters . Maybe I will add a San mig which is easily accessible

You should try bun bo Hue, JP.

I like pho too, but bun bo Hue is a level above in the flavour stakes.

    Especially with the pig's blood.

My bad AO, I'm not up on the Mexican lingo.

Last week we had these... not sure what to call them now.

But whatever you call 'em, they were good. To be honest I think the daughter appreciated a night off the peas.

I coped OK, and my personal highlight was the home-made guacamole, made using a couple of the Pak Chong avocados with lime juice and coriander from the garden.

    Mucho yummo!

You could call that a taco. A bit of advice regarding the tortillas. Heat them up first, either in a pan or thirty seconds in a microwave will do. In a proper Mexican restaurant, they are always served hot. You will find them much more enjoyable to eat that way.

    Yeah, I do both.
Microwave for 30 seconds with the cheese on.
    Add you filling then wrap.
Crispy up in a hot pan on either side for 10 seconds.

You don't need to go to 'Spoons' for a fish an' chips mate.

Get yourself down the market and buy a pla tabtim (red tilapia).

Then you could turn this... (and that's a Size 45, btw)

    To this...

    To this...

It's not quite cod and chips, but a pretty good substitute for Isaan. And no need to drink with riffraff and eat off stupid plates.

The extreme closeup shot is definitely the best of the bunch.

The kid doesn't wear headphones at the table, does she?

I posted a Daily Moan post a few months ago about seeing kids in restaurants with their family, and they're not only on their phone or tablet at the table, but have their headphones plugged in too.

Thought about updating the moan a week or so ago when picking up the kid from school, and the other students would come out in pairs or small groups, and they too would have one or two headphones plugged in while in a social setting. I mentioned to the kid that we don't play on our phones in a social setting as it indicates that we are more interested in that than the company of the person/people with us. Just what signals does plugging in your headphones give off.

Definitely not... a pet hate of mine and no phone allowed at the table.

    Hence it being laid down.

I'm allowed a phone just for photographic reasons.

Sorry, I didn't read the rest of your post because I'm listening to something interesting on my headphones.
