Since I told the wife that I have to watch my cholesterol a bit we seem to have had pork for almost every meal. She's thoughtful like that.
But I needed a change yesterday, so before she took yet another piece of pig out of the freezer, I quickly took out some fish.
Baked barramundi fillets with prawns on a bed of mashed potato. With peas.
The daughter finished school for the hols yesterday so a rare Leo was also enjoyed!
I'll be making this again.

The kid loves to make Shrimp Pop (tempura shrimp) with them.
I don't usually pay attention but did happen to notice that they went 129thb to 199thb a pack.

I have to say that I eat virtually no processed food. Maybe a can of beans a week and the occasional tin of soup. Sausages maybe once a week.
Not a great deal of red meat either, until the wife gets the pork in.
I think that bacon and cheese are two of the worse offenders in my diet, both of which I am steadily reducing... but not easy obviously.
Cholesterol doesn't distinguish between frozen of fresh veg, or meat for that matter. But I do need to eat more fish.
Edit: Virtually all of my pies are home-cooked from proper meat, but obviously the pastry is an issue. How far do you take it?
^ Oh, and shrimps are very high cholesterol. Some things are surprising.
Not sure Mendy's diet includes that much processed food, tbf.
Prawns are high in cholesterol.
The more mileage an undersea food source covers, the better in cholesterol terms.
As long as they are not preying on other fish and ingesting their unhealthiness.
Prawns barely move and live on shit.
Asian style beef short ribs.
Start by boiling the meat in water, with nutmeg, star anise, cloves, and black pepper for about 45 minutes or so.
Then mix tamarind, Thai fish sauce and palm sugar. (Roughly equal parts of each. Drain the ribs (the dogs enjoyed the minestrone soup) and then coat all of the ribs in your sauce mix.
lay in a tray and place into an overnight at 180° for about 15 minutes.
or about the time it takes to drink a G&T…
Serve with rice and cucumber.
It's all about moderation, how it's cooked, portion size, ingredients, exercise etc.
I refuse to give up enjoying things I like to eat or do. Some become a bit obsessed with all of it and become miserable because they gave up what they enjoyed to live a few years longer of which many aren't living, they are just waiting.
^ Thankfully my weakness is peas, and they're very good for you.
I spent last week in Bangkok and went six days without a single pea, but last night I was straight back on that horse.
Carrots and sprouts too... what's not to like?

Yesterday we had our Christmas dinner at lunch time so I'm not sure of this is the correct thread or not?
But anyway, a small snapshot into a Christmas in Korat...
I'm big into pre-preparing these days and all this was done on Christmas Eve.
Prepared veg and crumble made easy work of it on Christmas Day. Makro had fresh sprouts in for Christmas and I made the most of it.
The miniature turkey just fit into the convection oven. The daughter asked me whether I'd be cooking the bird upside-down again this year... I must cook around 200 near-perfect meals a year, make one mistake and that's what she remembers. Bloody kids.
I took the foil off for the last 20 minutes to brown things up a bit.
And had to borrow the gardener's convection oven for the veg... after a damn good clean and sterilisation.
While I was cooking, the wife, in a rare act of thoughtfulness, started feeding glasses of this weird strawberry-flavoured Japanese wine and I must admit I was a bit of a mess by the time Christmas lunch was ready.
I was on the normal Mont Clair red wine by this stage and the gardener had brought along his own Ya Dong in one of the daughter's old school water bottles. I'd been wondering where they've been disappearing to. He had the choice of beer, wine or whisky but genuinely seems to prefer the Ya Dong.

It was only when posting this picture that I realised I didn't get a bacon roll... and I was the one who cooked the bloody meal as well.
We had no Cranberry Sauce but I found a few tubs of 'Tyttebaer' that must have found their way back to Korat from my Norwegian work boat. They seemed to do the job.
Before getting stuck in, the pre-prepared apple and forest berry crumble went into the convection oven.
Around 45 minutes later...
The crumble was a bit watery and the apple was a bit hard. Next year I'll give it an extra 30 minutes. The custard was perfect.
And that was it, really. You know when the early Japanese strawberry wine has really taken it;s toll when you wake up in the morning with a load of selfies on your phone that you have absolutely no recollection about.
God knows what went on, but Lola isn't even allowed in the bedroom any more. I haven't said anything about it but the wife and daughter have been giving me very strange looks today.
