    Eggplant,tomatoes, onions and garlic. very easy to make and if you like Eggplant to die for.
    cut the long purple eggplants (not these small round green ones) in small chunks , cut plenty of onions coarsely. dice plenty of garlic and cilantro, mix all in baking tray with plenty of olive oil salt and pepper can of diced tomatoes and a can of tomato sauce and bake.

    Had a friend over at Christmas and New Years and he remarked how his 94 year old dad still loved to go our for a crab or seafood louis up in Bodega Bay at the Tides. Made me remember my mom loved that dish as well. So we whipped one up yesterday. Easy to source everything and a quick trip to Villa for capers needed for the Louis sauce.

    So here is our attempt at a bay area Crab Louis or Seafood Louis.

    Looks good and healthy. Though I must say, even though I eat my share of them, I'm suspect as to the exact quality of shrimp.

    I stopped eating farm raised Salmon and tilapia after watching several documentaries on water quality, the health of the fish and the antibiotics used to keep them healthy. Not to mention the artificial color added to make them look "good".

    Many processed shrimp here are from India and Thailand. They look and taste fine and I'm sure they have strict quality control measures in place while raising them or they couldn't possibly be on the global market.

    My doctor told me not to worry about that stuff as the Pendleton will kill me sooner.

    I said Amen brother, I'll drink to that.

    Where can you find wild caught salmon in Thailand? I was at Tops in Khon Kaen and asked if the salmon was wild caught , they said it was, I am sure it was not , it looked too red, like the farm raised Salmon.
