    Goan pork curry (vindaloo).

    Make a garam masala (cinnamon, coriander, cumin, cardamom, pepper and cloves):



    Then a paste (garlic, ginger, chilies and vinegar):



    Combine and marinate the meat (throw in a bit of turmeric too cos you reckon that might be a smart move):



    Fry onions until they start to turn brown:



    Add the meat and liquid and cook for an hour or so before serving with rice and a fresh chapati:

    Does anyone here use a pizza stone for their oven? I don't think I've seen them for sale here.

    I read of another trick of using an unglazed floor tile. Just wash it after digging it up off the floor.

    Yeah, it was. Marinating the meat and then frying it before adding any liquid made a big difference, and it was a piece of piss to cook compared to some other Indian recipes out there.

    Regarding the pizza stone, my friend used a floor tile. He had a proper expensive BBQ set up outside, but I think it'd take about 3 weeks for most of these little ovens in Asia to heat a stone up!

    M'sahib away to yoga this evening so cooking solo. Pan fried a couple of small pieces of pork loin, then whilst they were 'resting' made a grain mustard with cream sauce to make them more interesting.

    Side salad of Cbinese leaves sprinkled with some parmesan and a few routons and good to go.
