Have some belly of pork in the fridge that needed using. Slung it in the oven, 200 deg to start for 40 minutes, then 80 deg for 2 hours, switched it off, and walked the dogs leaving the pork in the oven. Turned out nice again

Half can of coconut milk in a hot pan. reduce it until it separates into oil and the flesh starts to brown. Use that as the oil and fry everything off in that.

OK so where did I get to? Soften the veg and the rest of the coconut milk and another can. Bit of water, beef stock cube, coriander, potato and chopped up pork.
Simmer until potato soft.
Pseudos Malaysia Pork Curry - Done.

Yeah that curry does look good, but rather metrosexual; once that manly bit of pork had been removed from the oven it should have been eaten with some potatoes as is; preferably with the bare hands.
