Enchilada, that's it! I can never quite remember the differences between enchiladas, burritos, flautas, quesadillas etc...I do know that the chimichanga is a deep fried burrito though. :)

Great minds Norts, I cooked for some of my wife's friends for her birthday Saturday. Same meal but had the beans on the side. Think you had a better photo though.

Speaking of flour, wheat flour... Penne roni Cheese, not had Mac in yonks, 10 mins and done. Had some cheese to use up cheddar, garlic cream cheese and stilton.

I know not as photogenic as some of the dishes you all post , but I love string-beans .
The problem I had though was with the string part. especially late in the season when the beans were more mature and had more string and less bean.
I tried everything to remove the string on it's side.
Gadget I ordered from China (useless)
Potato peeler(removed half my bean)
etc
And finally I had an Idea (patent pending) , cut the tip with a paring knife and before you get to the string , turn the knife flat and pull, (on the string bean )
I works fabulously:)
So without any a ado and further delay ...... Drumroll please.

In a light tomato Sause, with sauteed onions , garlic, and cilantro.
After the beans were two thirds done , because potatoes cook faster than the string beans, cubed potatoes.
for a bit of a twist on the old recipe , this time I added a couple of cluster of fresh pepper corns .
Bu the way, we all buy these pealed tomatoes in the can for over 100 bht. Fresh tomatoes are a lot cheaper and taste better.
simply drop a few in a kettle and par boil for a few minutes, than take out and place in cold water. The skin peals tight of. and for a few satangs you have pealed tomatoes.

^^^ I believe it's called 'blanching'. I've always just poured boiling water on the tomatoes in a bowl but maybe I'll try sticking the tomatoes in the kettle from now on. I've never tried tomato flavoured tea.
I'm familiar with 'string' beans, or 'runner' beans as they're more correctly called in the UK. In fact I'm growing a few right now.
You could have added a nice bit of lamb to make a proper Greek meal of it? :)
