    Imagine that. No canned peas, no runny baked beans, no animal guts. Just a bit of corn (Tortillas), some lettuce, tomatoes, olives, cheese and hot sauce. And moreover you have to chew it versus sucking it down on a spoon.....

    That is California Mild cheddar Mate.. Perfect on Taco's. I have a bunch of Tillamook cheese but that California cheese works great versus using some cheap Makro cheese mixed with others...

    Hell ya! I eat tacos like that on a regular basis. That was one of the things my mom made that I actually liked.

    first off let me preface by saying I love English Cheddar. I have at least two or three in the fridge. That said, sharp cheddar is not good in tacos or burritos. The cheese needs to be mild so as not to overpower the other ingredients. If you want authentic Mexican tacos, then you would not use cheese at all.

    Stumps is making American style tacos and for that you need a mild cheese.

    Absolutely. In general most Baja style tacos I had in Mexico either had no cheese or Goat cheese. English strong Cheddar, while tasty, over powers the food. Like fresh cucumbers on a salad.

    I do like a taco or 12, but I reckon you should have a pot on the side for some gravy to dip them in. And maybe some mushy peas too.
