Decided to take a swing at a Thai curry after not making one for a couple of years. Panaeng paste and 2 tins of coconut cream
The panaeng paste from this valcom jar was underwhelming so I then decided to steer it in the direction of a Satay to explore this option again after the too spicy one I made recently
With the peanut butter added I was able to bring up the earthy umami with some sesame oil and soy sauce and fit sot
It is not as instagrammable as PAGs pro-curry or Joe's new photos but ginger garlic nutmeg honey and cinammon filled out the flavour quite nicely and I rescued this one from the jaws of mediocrity to a solid 6 day batch of slightly less spicy satay. I can see satay becoming a pillar of my curry repertoire

I sometimes struggle getting specific curry ingredients, as I'm sure that many others have the same problem. I was searching today for Atta flour, a type of Indian wholewheat flour specifically for making Chapati/Roti. Seem to have anything you could possibly think of in respect of sub continent spices and ingredients, and the prices seem reasonable also.
There are several similar stores on Lazada.
It's definitely the place for 'hard to find' food ingredients.

Thought I would have another crack at the famous vindaloo
This time I wanted to try coconut cream instead of fresh cream
This vindaloo has more of a kick then I remember with the last lot so I think the dairy cream has a more mollifying effect on the savage vindaloo ninja spiciness than the coconut cream
Overall I would say that dairy cream adds a mouthfeel textural richness that the coconut cream lacks but the coconut cream really lets the ninja spiciness kick through on full power

The coconut cream also has a naturally thickening effect which the dairy cream lacks. I noticed that it was thicker before I added my usual flour thickener so I tried to modulate it down from the usual 50g to 40g but it was still over thickened so this weeks top curry tip is to use the flour thickener sparingly when going the coconut route

I guess it's readily available in Cheshire, another Ghee whizz is some clarified butter and or Bio Actifidus natural plain yoghurt like Onken. I usually add half a glass of red wine, never use stale or sour left over wine if iy\t isnt good enough to drink don't use it.
I prefer to serve the curd on side like a book, but then I'm a paperback Raita..

3/4 of a kilo of Marinated Tumeric Chicken..
Sautéed in coconut oil and apple cider vinegar..
Then add the heavily marinated chicken..
Then into the big pot to stew for an hour..

I offered to take Senorita out for her birthday tonight but she instead requested that I come over and cook one of my curries for her in her kitchen, like Axe does in Billions. So I was a low rent PAG for the night.
I brought her a giant Amaryllis flower from my garden, which have just started sprouting this week, and a bottle of bubbly

Getting busy in the kitchen. In the plastic bag is 3/4 Kg of giant raw prawns for the meat.
This was a Korma curry. The ladies' mild favourite but I sneaked in 4 chopped birdseye chillis to turbo charge it a bit
Asparagus and broccolini garnish to give it a bit of colour. Her housemate from Timor came home, so lucky I had made a full bloke batch with as much left over to last a few more days.
Looks like she takes in laundry nicely.
