I nearly stuck this in the 'Q-ing' thread but for some reason I decided against it.
Today for lunch it was barbecued organic pla duuk, freshly caught yesterday from the pond.
Soi sauce, fish sauce and a wad of lemongrass and kaffir lime leaves.
Stumpy kindly lent me his 'Q-ing' set-up.
And then just wait...

And wait... sometimes it feels like I'm the only one that does anything round here.
Anna awoke from her slumbers and told me when it was ready... she loves her fish.
The catfish were cooked but wetter than I expected... more like steamed fish. I decided to take off the foil and cook a while longer to crisp them up a bit.
This kind of worked but the skin stuck to the grill. The fish were big enough to have firm dark flesh and I think next time I'll rub them in salt and dispense with the foil from the start.
Who says there's no such thing as a free lunch... so long as you don't count the cost of building the pond, the cost of the fish pellets and the medical cost of having my toe nails fixed up last year.
It was very nice but I must admit I'm looking forward to sausages tonight.
And of course Anna received her reward...

You will be eating them fish for years before you even break even on the expense youve gone to . But fuck it as long as its entertaing you ( and us) crack on. It even keeps the dogs amused. And the Gardener.
It most certainly could have gone on the Q thread.
Wrapped in foil traps the moisture inside. And therefore steams rather than grills it.
If you don't want the skin to stick you need to oil the grill (using a spray or oil newspaper and wipe) and oil the fish. Also best to use a hotter grill. So light it and leave the coals longer to build up before cooking .
An excellent meal nonetheless.

I haven't seen Ciabatta in my local Big C. Is it a new product for Big C or is it just that your local branch is better than mine?
Actually, there's a riveting story about ciabattaic tales.
That was from the supersized Big C Extra, which is just as supersized as the Big C Su-puuur-Sen-tuurrrr, but.....
It (They, nationwide) were Carre-Four until 10 years ago. When they sold up shop, so to speak, Big C took them over as Big C Extras, kept some of the supply chains and notion of exotic foreign goods. So it's the place to go for such delicacies. Along with rubber cheese for 400 baht per 160grm.
